Scaman's Eggs

Free-range Lincolnshire eggs

Scaman’s Eggs are a well-known name across Lincolnshire for their passion and committed to animal welfare throughout all their farms. They’re a small family-run business, with big ambitions – making a positive impact in their local community and supporting local businesses & employment.

Lincolnshire Poacher

Cote Hill & Goatwood Dairy

Lincolnshire produces some of England’s finest cheeses, and with so many to chose from, all of the cheese we serve in our restaurant has been hand picked from our favourite local cheese suppliers. These include Lincolnshire Poacher who have been producing cheese since 1917, Goatwood Dairy, based in Wragby and Cote Hill who have been producing cheese at their farm in Market Rasen for over 30 years.

 

Three Little Pigs

Chorizo and salami

Three Little Pigs are a family run business spanning five generations. From their Beverly farm they make all their chorizo and salami by hand in small batches – using happy, rare-breed pigs to give their products a distinctive flavour. Three Little Pigs have won the Great Taste Gold Awards 3 years running for their products, and, as well as us, their customers include Michelin-starred chefs.

Oscar Cleve

Haddock

4Oscar Cleve supply fresh haddock on a daily basis to our restaurant The Comfy Duck. They rely on traditional fish markets that are held daily on Grimsby Docks. Their fish is used for every portion of fish and chips we serve from our restaurant. The fish is cooked in a homemade beer batter and served with hand-cut, twice-cooked Lincolnshire potato chips, homemade mushy peas and tarter sauce.

Alfred Enderby

Smoked fish

An independent family run business who still use the traditional smokehouse methods to smoke their fish – infusing it with the very best natural flavours. They pride themselves with the skill and craftsmanship that goes into their products.

Bateman's

Real ale

A family run business based in Wainfleet, Bateman’s have won awards at the Publican Regional Brewer of the Year. They’ve been craft brewers since 1874 in the Bateman’s Brewery windmill.

Belvoir

Cordials, presses and fruit crushes

Belvoir make a selection of cordials, presses and fruit crushes right here in Lincolnshire. They starting making cordials in kitchens in the seventies, and still use the same traditional techniques of infusing, pressing and cooking off fresh fruits, flowers and spices then are mixed with local spring water to make the delicious beverage. They choose only the best ingredients, and are proud not to use any artificial ingredients.

House of Townend

Fine wine

House of Townend is a 100-year old family business based in Hull, supplying some of the finest wines available. They’ve built relationships with some of best and most renowned wine producers in the world, including Laurent Perrier and Pol Roger. They also specialise in supplying wines from quality, often smaller, family run business that have the same philosophies as themselves – which matches our philosophy perfectly.

John Pettit’s

Lamb and sausages

Located in Grimsby, John Pettit’s is a multi-award winning butchers who supply us with our free-range lamb, which is primarily from the Lincolnshire Wolds, just down the road. But let’s not forget their world-famous Lincolnshire pork sausages, still made to an original family recipe dating back to 1810.

Fresh fish and seafood

Premier Seafoods has been supplying Grimsby with the very finest and freshest fish and seafood for more than 30 years. They offer unique products you can’t normally get in regular fishmongers – they’re famous for their King Crab.

Fruit and veg

Fresh, seasonal fruit and veg are the backbone of our kitchen – and we’re proud to use local suppliers LKTE for as much of these as we can. They’re based just down the road in Boston and grow fruit, vegetables and potatoes all over Lincolnshire – delivering to us on a daily basis.

I’ve only been here for 3 years but I’ve worked alongside Steve for almost 20 – it’s like we’re family. I love meeting new customers and welcoming old faces, and making sure everyone has a great time when they’re with us. When our customers are happy, I’m happy – and those who know me, know I’m always happy. I really look forward to trying Steve’s new creations, it’s amazing what he can do and we all take pride knowing how much is sourced locally.

I’ve worked with Steve for 10 years, and being here is like one big happy family. We’re all so committed and are constantly pushing our creativity. We’re always looking for new inspirations to impress our customers and I love playing with unexpected, distinctive flavours when we’re designing new dishes – it gives me a chance to show off my artistic side.

I just love coming to work, every day is different and I thrive off each day’s different challenges. I really enjoy pushing myself to the limit, constantly developing my skills and working with fresh new ingredients – and it’s all the more rewarding knowing that almost everything is sourced locally. I’ve been a chef since I left college at 16 and have loved every job I’ve had – but nowhere compares to the friendly, working environment I’ve enjoyed here for the last year and a half.

The Comfy Duck for me, is so much more than just a good restaurant. The ethos of creating a dining experience that not only our diners can enjoy but our staff enjoy serving. We use humble, locally sourced ingredients and elevate them to an exceptional level and present them beautifully. I’ve worked in the industry both front and back of house for just over 20 years, bringing a great understanding of high-level service and ingredients to the table. When I’m not working, I spend my time with my family or watch Drag Racing at Santa Pod Raceway when the opportunity arrises.

My favourite dishes in the restaurant, generally revolve around game season and a Grouse dish we served before Christmas was like nothing I’d tried before. It utilised every part of the bird and was truly delicious.

Having worked as a chef for 5, I love working at The Comfy Duck because the fresh, high-quality ingredients we use from mainly local suppliers allows us to be continually creative and give classic dishes and ingredients modern twists to keep improving the food we create.

I love what I do that much, after meeting Michael Caines MBE at The BBC Good Food Show, I was cheeky enough to ask him if I could go and work with him for a few weeks at the two Michelin-starred Gidleigh Park Hotel and he said yes, so in 2015 I went and worked there for two weeks and had an amazing experience!

Working at The Comfy Duck is like being a part of one big family. After travelling around Europe working in the professional kitchen, I moved over to England 4 years ago and have been working my way up the kitchen ranks since. The food we serve here isn’t always simple, but we work with some of the best ingredients, and many sourced from around the restaurant and hotel.

 

Kay Atmore

I’ve been a chef for 15 years but I’ve never worked anywhere that runs as smoothly as here – it’s like a well-oiled machine, and that’s because we all get on so well. The last 6 or so years here have been so much fun, I get to bake bread all the time, which I love, and there’s always a tasty new dish or fresh local ingredient to try. You never quite know what’s going to come out of the kitchen, and I’m proud to be a part of the magic.

Richard De'ath

Assistant Operations Manager

Working with a huge team, and across both the hotel and The Comfy Duck, means I get to be involved with all aspects of the business. After leaving school, I worked alongside Steven Bennett in his kitchen, as a Chef, before moving away and returning back to Grimsby to study for my Degree in Business Management at Grimsby College. Landing role as Assistant Operations Managers here at the Oaklands Hall Hotel means running service in the restaurant, as well as hosting weddings and other events.

I love playing with all of the ingredients we have growing in our gardens, and working alongside the bar staff to create new cocktails to pair with dishes coming out of the kitchen.
